Oil: 2 tbsp
Mint leaves: a bunch
Ginger : ½ inch
Green chillies: 2
Coriander : a cup full
Salt to taste.
Coriander and cumin powder.
Some Tofu for garnishing.
Soak the brown rice in water for 30 minutes. Cut the vegetables as you like.( I prefer medium sized carrot cubes and vertically cut capsicum). Cut onions into small cubes. Cauliflower into medium pieces.
For the paste:
Add mint leaves, garlic, coriander and chopped chillies in the grinder and grind it into a fin paste. Keep this aside.
How to cook?
In a pressure cooker, add 2 tbsp oil. To this add cumin seeds ¼ tbsp .After heating, add chopped onions over this and then cook till golden brown. To this add the vegetables and stir. To the sauté veggies add the paste and stir again for 2-3 minutes. To this add salt as per taste and coriander and cumin powder(each ½ tbsp.).
To this mixture add the soaked brown rice and water till the rice is immersed. Pressure cook till 4 or 5 whistles. Serve hot and garnish with grated tofu.
You may have this with curd or raita.
Why to have it?
Brown rice is good if you are on diet.
Carrots are a good source of vitamin A
Capsicum is a good source of Vitamin A, Vitamin C and Vitamin B6
Can be cooked for lunch or dinner. Great substitute during weight loss if you are craving for pulav or biryani.
