Pumpkin Delight


Pumpkin (one cup full of cubes)

Coriander powder (1/4 tbsp.)

Cumin powder (1/2 tbsp.)

Oil (1 tbsp.)

Salt to taste

Tamarind pulp (1 tbsp.)

Jaggery ( 1 tbsp. grated)

Mustard seeds (1/2 tbsp)

Turmeric (Pinch)

Red chili powder (1/4 tbsp.)

Curry leaves ( 2 to 3)


Cut the pumpkin into large cubes. Cook these in a pressure cooker up to two whistles. Take the oil in a pan. Add mustard seeds and curry leaves. After the mustard seeds start cracking, add the cooked pumpkins. To this add turmeric, red chilli powder, and coriander and cumin powder. Sauté this. To this add the tamarind paste and jaggery. Add salt as per taste and then sauté to mix all the ingredients . Your Pumpkin delight is ready!
