Ingredients:

Spinach : 1 cup chopped

1 Cucumber:  diced into medium size pieces

1 Tomato: Cut into medium size pieces

1 tbsp cumin powder

1 tbsp coriander powder

1 tbsp red chilli powder

salt as per taste

1 tbsp oil

1 cup cooked brown rice

Procedure:

Cook brown rice in a pressure cooker .

Take the diced cucumber, spinach and tomato in a bowl. Add oil to it. Then add remaining ingredients ( cumin powder, coriander, chilli powder and salt) and mix it well. Microwave this mixture at 200 degrees for 3-4 minutes.

At last add brown rice to this and again microwave for 5 minutes at 200 degrees.

You may have this with curd or daal.

Why to have?

Spinach is rich in iron and a great source of fibre.

Cucumber is a great source of potassium.

Brown rice is a great substitute to white rice

When to have?

You may have it during lunch or for dinner.
